More orders are good news for a bakery, but insufficient capacity can turn the opportunity into long queues, heavier workloads and lower bread quality. This often leads owners to consider new machines and modernization.

First identify which part of the current process needs to change. The main constraint might be dough preparation, slow sheeting or insufficient oven capacity. Understanding the bottleneck helps you invest where it will have the greatest effect.

What Does Bakery Modernization Actually Mean?

Modernization uses equipment and methods that make production more controllable, organized and suited to business needs. It can start with replacing one machine or extend to a fully automated production line.

In one bakery, adding a sheeter may ease the workload. Another may need a coordinated line for dough preparation, shaping and baking. There is no single modernization path for every bakery.

Step 1: Find the Main Production Bottleneck

Before comparing machines, observe several normal and busy working days. Identify where production slows or stops:

  • Is dough ready in time to keep production running?
  • Do dough dividing and sheeting keep pace with baking?
  • Does prepared dough wait too long before entering the oven?
  • Do bread thickness and dimensions vary during the day?
  • Does collecting and packaging slow down product output?

These answers reveal which stage limits total capacity. For example, faster sheeting helps only if the baking stage can accept more dough.

Step 2: Define Bread Type and Required Capacity

Start with the bread you want to make. Lavash, Taftoon, Barbari and Sangak require different dough shaping and baking conditions, so confirm compatibility with your bread type, dimensions and desired product characteristics.

Define capacity alongside bread type. Current sales, peak-hour orders and growth plans provide a useful basis.

When comparing machines, ask how capacity was measured. Bread per hour alone is incomplete without weight, dimensions, dough type and baking conditions. Prefer assessment with a product close to your intended bread.

Step 3: Review Bakery Space and Infrastructure

Before buying, allow for machine dimensions and space for installation, operators, cleaning and servicing. Arrange equipment to make dough and bread move easily between stages.

The initial review should cover:

  • Site dimensions and the equipment access route into the building
  • Electricity and fuel requirements, according to equipment specifications
  • Ventilation and oven installation requirements
  • Dough preparation and resting space
  • Bread output, cooling and, where needed, packaging areas
  • Access to machine parts for cleaning and repairs

A technical site inspection before the order is finalized helps identify installation and layout constraints.

Step 4: Choose Between a Staged Upgrade and a Complete Line

If some existing equipment still performs well, consider upgrading in stages. Address the biggest bottleneck first, making sure the new machine matches existing equipment in capacity and dough or product transfer.

For a new facility or major expansion, a complete production line may be more suitable. Its stages and capacities can be designed together from the start.

The choice depends on your existing equipment, installation space, budget and target output. Before deciding, ask the supplier to explain the proposed equipment combination and why each part is needed.

Step 5: Consider Operating Costs Alongside the Purchase Price

The purchase price is only part of the equipment's cost. Also compare installation, training, energy, periodic maintenance, consumables and potential production downtime.

Ask the supplier about maintenance schedules, warranty terms, spare parts availability and technical support. Also establish how many operators are needed and which skills they require.

Evaluate every claim about cost savings or higher output against your bakery's real conditions. Results depend on utilization, product type, settings and maintenance.

Step 6: Include Training and Commissioning in the Purchase

Staff training is essential for proper operation. Operators should understand permitted settings, cleaning procedures, safety precautions and signs that servicing is needed.

During commissioning, assess the machine using the intended dough and product. The production team should learn the right settings and how to control quality throughout operation.

Assign responsibility for cleaning, daily inspections and periodic servicing from the start, and keep the manufacturer's instructions available to staff.

Make Bread Quality Your Measure of Success

Higher output is valuable only when the finished bread meets an acceptable quality standard. After installation, monitor not just speed but consistency of weight and thickness, baking quality, waste and customer satisfaction.

Suitable equipment enables better process control, but flour quality, dough formulation, resting time and baking settings must also be managed.

Where Should Equipment Selection Begin?

For a technical proposal, first prepare the bread type, product dimensions and weight, target capacity and installation space details. Photos and a simple site plan can help the initial review.
